Origine
Inspiré du Zathar (zataar prononcé zatar) libanais, ce mélange associe des herbes de premier choix (menthe et origan), la graine de sésame, les épices (sumac et curcuma) avec une pointe de sel de mer.
Zathar signifie en arabe Thym. Il désigne également une variété d’origan et la famille des Lamaiacées (c-à-d, regroupant les thyms, sarriette, hysope, origan, menthe, marjolaine…). Nous sommes donc sur des notes herbacées assez fraîches. Ce mélange d’épices du Moyen-Orient est couramment utilisé dans la cuisine levantine (pays bordant la mer Méditerranée tels que la Syrie, le Liban, l’Egypte, Israël…).
