Description
Le poivre de son nom latin piper nigrum est depuis sa découverte l’épice de toutes les convoitises. Inimitable, rare, cher, il aromatise nos assiettes comme aucune autre. Dans cette recherche de goût et d’une nouvelle façon de le consommer, la Maison Thiercelin a travaillé sur un nouvel état du poivre : le poivre frais fermenté ; ajoutant un autre trésor à sa gamme de produits fermentés : Ail noir, Vadouvan, Citron noir de Valence.
Récolté vert, un mois avant maturité, c’est après une longue fermentation en atmosphère contrôlée qu’est obtenu ce produit hors du commun. Une baie souple qui craque telle un pétale cristallisé, doté d’une saveur inimitable, à la fois fraîche et suave, avec des notes rondes typiques. Stable, il se conserve ainsi plusieurs mois.
Utilisation en cuisine
A passer au moulin ou tout simplement à déposer sur une viande, des légumes, un poisson, un amuse-bouche. SURPRENANT ! Il se mange tel quel sans brûler le palais.
