Originaire d’Afrique noir, notamment de sa côte Ouest du côté du Ghana et du Togo, le poivre Selim (Xylopia æthiopica A. Rich.) appelé également poivre de Guinée, piment noir de Guinée, Kili, poivre de Sénégal, graines de Selim, Selim pepper, Kani pepper, Kili pepper, Kanipfeffer, Selimskörner, Pimienta de Guinea, Pimenta-da-áfric, Pepe Selim, Pepe Africano, αφρικάνικό πιπέρι, Мавританский перец, فلفل السودان, 아프리카 고추, アフリカのコショウ, キリコショウ y est d’un usage constant.
Description
Il s’agit des fruits d’un arbre de la famille des Annonacées indigène sur la côte ouest de l’Afrique du Sénégal à l’Angola. Ce sont des baies longues et étroites ayant des étranglements peu prononcés et irréguliers entre lesquels est situé une graine noirâtre. La pulpe possède un goût aromatique, piquant, légèrement musqué rappelant à la fois le gingembre, le poivre et le curcuma.
