Origine
Le pois chiche est originaire du bassin Méditerranéen où il constitue un légume de base dans l’alimentation. Pour la petite histoire, saviez-vous que le pois chiche se dit cicer en latin. Il donna donc son nom à un ancêtre de Ciceron qui avait une verrue en forme de pois chiche au bout du nez !
Description
Le pois chiche est une légumineuse, donc naturellement riche en protéines végétales, en vitamines et minéraux, et en fibres alimentaires. Faible en matières grasses et sans cholestérol, aux utilisations multiples, le pois chiche peu être consommé facilement par tout à chacun. Il est d’ailleurs couramment utilisée dans la cuisine méditerranéenne.
Le pois chiche est l’un des principaux ingrédients du fameux hoummos et des falafels, deux mets traditionnels du Moyen-Orient qui gagnent en popularité. Il a un léger goût de noisette.
Certains chefs de cuisine se servent de la farine de pois chiches pour faire des frites. Absolument surprenant !
Utilisation
Les pois chiches secs doivent être trempés plusieurs heures, puis cuits dans l’eau avant de les déguster.
