A base de matière amylacée, de couleur blanche, comme des petites perles d’un calibre qui permet une utilisation variée.
A utiliser dans des potages et consommés, veloutés et laitages, entremets, gelées, sauces de poisson, elles servent de garniture ou pour épaissir. Elles donnent un aspect consistant très joli en décoration.
Pour la préparation il faut jeter les perles du Japon en pluie dans un liquide bouillant et laisser cuire à feu réduit pendant 20 minutes tout en remuant de temps en temps.
En ce qui concerne le dosage il faut compter 50 g de perles du Japon pour un demi litre de lait et 30 g de perles du Japon pour un demi litre de bouillon. N.b. : 1 cuillère à soupe = 10 grammes environ.
