Origine
L’orge est une céréale cultivée depuis des milliers d’années. Il est essentiellement utilisé dans la fabrication de la bière. En cuisine, les grains d’orge peuvent être mondés par un passage entre deux meules pour faciliter son utilisation : il s’agit de « l’orge perlé ».
Description
L’orge est une Graminée herbacée aux fleurs disposées en épis simple. C’est une céréale pauvre en gluten, et donc difficilement panifiable. Autrefois, l’orge servait dans la fabrication du pain mais uniquement mélangé avec du blé. L’orge est riche en fer, zinc, vitamines PP et E : c’est un aliment sain et équilibré.
