Découvert lors d’une expédition au Népal fin 2009, le poivre Timut du Népal (cousin du Xanthoxylum piperitum) ou « poivre pamplemousse », poivre pomelo, poivre de Timut, Timur pepper, Timut pepper, Timut Pfeffer est la grande trouvaille de la maison Thiercelin.
Le poivre Timut ressemble étrangement à une baie de Sichuan en plus petite et plus foncée. Et pour cause, c’est un cousin.

Fort d’un long travail avec nos fermiers sur place en insistant sur la qualité du séchage et du tri, nous avons pu mettre en place une filière de qualité tout en revalorisant ce « poivre ». Pour les amateurs de saveurs plus suaves, nous avons élaboré un fabuleux sirop au « poivre Pamplemousse » — à partir de notre poivre Timut — ainsi que cette fabuleuse moutarde aux notes si particulières et exquises.
Utilisation
Une moutarde avec grains à l’ancienne idéale pour accompagner les salades, les crustacés, le poisson, le canard et autres viandes blanches. Les notes de notre poivre Timut s’accompagne particulièrement bien avec de la langoustine.
