Origine
Son nom vient de l’hébreu « kamon ». Son utilisation est très ancienne puisqu’on retrouve des graines dans les tombeaux des pharaons. C’était l’épice préférée du roi Salomon et de Pline, et les Arabes s’en servaient comme aphrodisiaque.
Description
Le cumin (Cuminum cyminum) ou Kreuzkümmel, Komijn, Spisskarve, Kmin, Spiskummin, Kloeftsvoeb, Comino, Maustekumina, Borsos kömény, Comino, κύμινο, كمون (kammun, keymoun), כמון (kamon), जीरा, тимон, 小茴香, 커민, クミン est souvent confondu avec le carvi, c’est une petite plante méridionale annuelle de la famille des Ombellifères qui ressemble à ce dernier dont elle a la grandeur et l’allure générale, bien que ses fruits soient plus grands et leur arôme plus puissant et moins raffiné.
On utilise les graines. Elles ont une odeur forte et aromatique voisine de celle du fenouil, à la saveur chaude, piquante et âcre.
