Issus d’une sélection rigoureuse, nous avons retenus l’amande, la figue, la noisette, les raisins Golden, de Malaga, de Corinthe et de Smyrne, l’abricot, le pignon de pin, la pistache et la noix de Pécan. Pour vous faciliter l’emploi, tous les fruits sont entiers, décortiqués si nécessaire, également en poudre (noisette et amande) et en crème (amande, noisette, noix et pistache). Alliant saveurs rustiques, exotisme de la noix de pécan, parfum d’antan avec le pignon de pin et couleur avec la pistache, notre sélection devient votre nouvel atout pour vos créations salées et sucrées.
Pour ceux qui se souviennent en avoir ramassé dans un sous-bois à la fin de septembre, ce fruit reste toujours la plus délicate des gourmandises. Commune en Europe et en Amérique du Nord, la noisette est parmi les fruits oléagineux le plus riche en lipides (63%) et en protéines (16%). Elle contient du calcium, du phosphore, du magnésium, du potassium et du fer. Elle est tr!s énergétique (650 kcal/100 g).
Utilisation en Cuisine de A à Z des noisettes
Elles s’utilisent soit entières soit en poudre. Vous pouvez parfumer les farces et les terrines. Hachées finement dans un beurre fondu, elles nappent les poissons, les crustacés et le gibier. Les noisettes se marient avec les champignons et les légumes. Leur goût est agréable dans les salades de fruits.
Truc et astuce pour retirer la peau des noisettes
Faire chauffer le four à 160°C 10-15 minutes.
Incorporer les noisettes dans un plat, puis placer dans le four.
Laisser dorer quelques minutes tout en surveillant.
Réserver et laisser refroidir.
Vous pouvez maintenant retirer la peau sans difficulté en frottant les noisettes à l’aide de vos mains.
